On the downside:
Like I mentioned, it’s great for special occasions. This is definitely something we do not want to do every day, unless you’re planning to put up an eatery.
Personal Experience
This has been a family tradition that my grandmother had been doing for special occasions since I was so little. I like the fact that preparing this ourselves means that it’s served fresh with a mild taste, minus the fats. I always wanted to insert some herbs into the meat while broiling so that this will add aroma and flavor… but they would not let me interfere… Let’s get on with the recipe!

RECIPE
Ingredients needed:
- 4 kilograms pork meat (liempo or pata parts)
Materials needed:
- Pressure cooker
- Turbo broiler
- Wire rack
Procedure:
- Boil the meat inside the pressure cooker for 20 minutes to soften the meat.
- After that, you can remove the meat and place it immediately into the broiler.
- Put it on a wire rack so that the broiler can circulate in all directions. This also makes all the fat drip down from the meat, as you will see in the photo below.
- Set the temperature to 300°C/149°F, then cook the meat for 60 minutes or until golden brown.
- Once the desired outcome is attained, you can shut of the broiler and let it sit there for a while so that the juice can drip off.
- Once the dripping stops, you can take out the meat and have it chopped.
- Add your favorite sawsawan to complete everything. Dinner is served!
